I finally got it!
After numerous failed attempts I have finally perfected the DIY protein bar.
Now let’s be honest, most protein bars are pretty nasty…bland and chewy. The good ones which taste like candy bars have just as much sugar as, well, a candy bar and will cost you well over $2 apiece.
These little babies are all natural, crispy and delicious. They taste like a chocolate peanut butter rice crispy treats. REALLY!
Here’s how to create them yourself. (Recipe inspired by Chocolatecoveredkatie)
3 cups of brown rice cereal (can also use rice krispies)
3/4 cup peanut butter
3/4 cup agave nectar
2 Tablespoons protein powered (I used chocolate, you can omit)
1 Tablespoon Chia Seeds (optional)
¼ cup coconut flakes (optional)
3 Tablespoons coconut oil (or low fat veggie oil)
¼ cup carob powder (you can use coco powder or chocolate chips)
1 teaspoon vanilla extract
1.) Crush rice cereal in a large bowl
2.) Mix crushed cereal, coconut flakes, chia seeds and protein powder together
3.) In a saucepan melt the peanut butter and 1/2 cup of agave nectar
4.) Mix the cereal mixture with PB/agave mixture
5.) Press into a pan lined with wax paper or plastic wrap
6.) In same saucepan melt coconut oil and 1/4 cup agave
7.) Add carob powder and vanilla extract
8.) Spread “chocolate” mixture onto bars and freeze
9.) Cut and enjoy! 🙂
